Try some of these delicious breakfast camping recipes that will start your day off on the right foot. They are tasty and pack a lot of nutrients you need to keep going.

Breakfast Skillet

Ingredients:

  • 1 dozen eggs
  • 1/4 cup milk
  • Frozen Orieda Hash Browns
  • 8 slices of bacon (crumbled)
  • Diced onions to taste
  • Cut up fresh mushrooms

How to prepare: Combine eggs with milk. Salt and pepper to taste. Cook hash browns, bacon, onions, and mushrooms in a large skillet. Cook until all ingredients are done. Pour egg mixture over top and continue to cook until eggs are done.

Corny Eggs

Ingredients:

  • 6 eggs
  • 1 small can cream style corn
  • Crumbled bacon or Bacon Bits

How to prepare: Lightly beat eggs with fork or whisk. Add cream style corn and bacon or Bacon Bits. Pour into lightly greased heated skillet. Stir until set.

French Toast Scramble

Ingredients:

  • 2 slices bread
  • 2 or more eggs
  • 2 T butter or the bacon grease
  • Pepper to taste

Options:

  • 1 T of any or all of the following:
  • Shredded cheese
  • Minced onions or scallions
  • Cubed cream cheese
  • Minced mushrooms
  • Crisp crumbled cooked bacon

How to prepare: Cube or tear bread into 1" pieces. Melt butter over medium heat in a skillet. Sauté bread until golden, then push up against the sides of the skillet, making an empty spot in the center. Break eggs in, stir lightly, add any optional ingredients, stir. Cook about 2-3 minutes, stirring lightly occasionally so the eggs set. Then stir bread down into egg mixture, allowing eggs to completely cook. Salt to taste at table.

Breakfast Tacos

Ingredients:

  • 5 eggs
  • 1/4 c. milk
  • Shredded cheese (however much you want)
  • 1/2 roll sausage
  • Chunky picante sauce
  • Flour tortillas

How to prepare: Crumble & brown sausage in skillet. Mix eggs & milk in bowl. Pour into skillet. Add cheese. Cook. Spoon into tortilla-add picante sauce.

From Scratch Pancakes

Ingredients:

  • 2 cups flour
  • 1 3/4 cups milk
  • 2 heaping Tbsp baking powder
  • 2 eggs, beaten
  • 1/2 stick (1/8 lb) melted butter
  • 3 Tbsp sugar
  • 1 tsp salt

How to prepare: Mix the dry items first. Combine the eggs and melted butter to the milk and slowly stir in the flour. Let sit while heating the pan. These will be high, but light and fluffy.

Apple Salad

Ingredients:

  • 1 apple
  • Crunchy peanut butter
  • Raisins
  • Chocolate chips
  • Sunflower seeds

How to prepare: Remove the core from the apple. Stuff with peanut butter and any of the ingredients listed above.

Peanut Butter Balls

Ingredients:

  • 1/2 cup creamy peanut butter
  • 1/2 cup honey
  • 1 cup dry milk
  • 1 cup uncooked oatmeal
  • Wheat germ

How to prepare: At home, combine peanut butter and honey. Gradually stir in dry milk and oatmeal. Shape into balls and roll in wheat germ. Let "dry" several hours on wax paper. Wrap individually in plastic wrap.

Pickled Eggs

Ingredients:

  • 1.5 cups of white vinegar
  • 1 bay leaf
  • 1 clove garlic crushed
  • 1 Tsp. mixed pickling spices
  • 6 hard boiled eggs peeled

How to prepare: Start by simmering vinegar and spices uncovered for 10 minutes. Add Garlic & bay leaf cool slightly. Pack eggs into screw top jar, add mixture over eggs, cover, and cool to room temperature. Refrigerate for 7-10 days or longer for stronger taste.
